Fried Sweet Potato & Sunchoke Tacos
I use white sweet potatoes.
Drizzle sweet potato with olive oil and salt.
Roast in 425 degree oven for about an hour, or until fork tender. I do this in advance & let them chill in the refrigerator.
Let cool & slice into 1/4" slabs. Season with amberoncini house seasoning. Heat cast iron skillet over med-hi. Add 1TB olive oil. Add potatoes & let fry 3 to 4 minutes on each side until brown & crisp.
Add 8oz sun chokes to small cast iron skillet. Drizzle with 1TB olive oil and season with 1 tspn amberoncini House Seasoning.
Roast in 425 degree oven for about 20 to 30 mins, or until fork tender. Remove from oven, then carefully smash sun chokes with back of fork.
Add 1 TB butter to hot skillet. Return to oven and cook another 10 minutes or until desired crispiness.
